To make this recipe, you will need 1 kg lamb that will be the most important part of this food. You will have the best part of this recipe from the lamb. This is what makes this food different from the other food that you can find today. You will also find that the rice you need for this food is the basmati rice. You will also need ghee, yogurt, onions, tomatoes and some other spices. This is what you will need in this kind Arabian Food that will set it apart from the other food.

Here is the recipe for Zurbian :

Ingredients :
  • 1 kg lamb with bones 
  • 3 cloves garlic 
  • 8 cups (or 2000ml) of water 
  • 2 tablespoons ghee 
  • 3 mediums (or 500 gr) onions 
  • 2,5 cups (or 500 gr) of basmati rice 
  • 1 cup (or 250 gr) yogurt 
  • 2 medium tomatoes (300 gr) 
  • ¾  teaspoon ground cumin 
  • ¾  teaspoon ground coriander 
  • ¾  teaspoon ground turmeric 
  • ¾  teaspoon ground cardamon 
  • ¾  teaspoon white ground pepper


Instructions :
  1. Place lamb pieces and water in a large pot. Bring to boil and remove froth as it appears. Remove lamb pieces from the stock, add the rice to stock, which should be around 6 cups or 1500ml, and boil it for 10 minutes or until almost cooked. Drain the rice and set aside. 
  2. Heat ghee in a large pot, add and cook the onions, stirring for 5-7 minutes or until golden brown. Add the cooked lamb pieces to the onions and mix carefully. 
  3. Combine the yogurt with the tomato, spices and the garlic and pour over the lamb pieces. 
  4. Add the cooked rice over the meat mixture, cover and cook over low heat for 25–30 minutes or until the rice is cooked. 
  5. Serve on a large serving dish and garnish with fried nuts.
